Mini Meatloaf Muffins – Quick & Delicious!
These Meatloaf Muffins are a fun and easy twist on classic meatloaf, baking up in just 30 minutes! Made with ground turkey or beef, Parmesan, and your choice of veggies, they’re perfectly portioned, packed with flavor, and great for meal prep or a quick weeknight dinner. Plus, they make your kitchen smell amazing while they cook!
Ingredients
1 lb ground turkey or beef
1/3 cup breadcrumbs or oatmeal
1/3 cup Parmesan cheese
1 egg
1 (8 oz) can tomato sauce (or ketchup)
1/2 teaspoon garlic powder
Salt & pepper, to taste
1 teaspoon Worcestershire sauce
1/2 cup finely chopped veggies (onions, mushrooms, zucchini, etc.)
Instructions
Preheat Oven – Set your oven to 350°F and lightly grease a muffin tin.
Mix Ingredients – In a large bowl, combine the ground meat, breadcrumbs, Parmesan, egg, garlic powder, salt, pepper, Worcestershire sauce, and ¼ of the tomato sauce. Stir in the chopped veggies for extra flavor and moisture.
Fill Muffin Cups – Divide the meat mixture evenly into the muffin tin, pressing it down slightly. Top each mini meatloaf with the remaining tomato sauce or ketchup.
Bake – Cook for 30-35 minutes, or until the meat is fully cooked and slightly browned on top.
Serve & Enjoy – Let cool for a few minutes before removing from the tin. Pair with mashed potatoes or a fresh salad for a complete meal!
