Irresistible Pineapple Quick Bread

Ingredients
For the Bread:
2 cups all-purpose flour
1 can (20 oz) crushed pineapple, drained (reserve 2 tbsp juice)
½ cup sour cream
1 cup sugar
3 oz cream cheese, softened
1 tsp baking soda
1 tsp salt
3 tsp vanilla extract
1 egg, beaten
For the Glaze:
1⅓ cups powdered sugar
2 tbsp reserved pineapple juice
Instructions
Preheat & Prepare – Preheat your oven to 350°F and grease a loaf pan.
Cream the Base – In a mixing bowl, beat together the sugar and softened cream cheese until smooth. Add the beaten egg, vanilla extract, and sour cream, mixing well.
Combine Dry Ingredients – In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, stirring until just combined.
Add Pineapple – Fold in the drained crushed pineapple and mix until evenly distributed. Pour the batter into the greased loaf pan.
Bake – Bake for 60 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack.
Prepare the Glaze – Whisk together the powdered sugar and reserved pineapple juice until smooth. Drizzle over the cooled bread before serving.
