Step 1 – Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a round cake pan and line the bottom with parchment paper.
Step 2 – Beat Egg Yolks
In a large bowl, whisk the egg yolks with half of the sugar until the mixture is pale and creamy. Stir in the vanilla extract.
Step 3 – Whip Egg Whites
In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.
Step 4 – Fold in Cornstarch
Gently fold the cornstarch into the egg yolk mixture. Then carefully fold in the whipped egg whites in batches, maintaining as much air as possible to keep the cake light and fluffy.
Step 5 – Bake the Cake
Pour the batter into the prepared pan. Bake for 30–35 minutes, or until the cake is golden and a toothpick inserted in the center comes out clean.
Step 6 – Cool and Serve
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar before serving, if desired.
