If you’re looking for a dish that combines the bold, zesty flavors of tacos with the creamy comfort of pasta, this Cheesy Taco Spaghetti is a must-try! It’s a family favorite that always disappears fast—my daughter and husband can’t get enough of it. Perfect for busy weeknights, this easy one-pan meal brings the best of both worlds together in under 30 minutes.
Ingredients
-
1 lb ground beef
-
1 packet taco seasoning mix
-
10 oz spaghetti noodles
-
1 can (10 oz) Rotel (diced tomatoes with green chilies)
-
2 cups beef broth
-
1 cup shredded cheddar cheese
-
½ cup shredded mozzarella cheese
-
1 tablespoon olive oil
-
Salt and pepper, to taste
-
Fresh cilantro or green onions (optional, for garnish)
Step 1: Cook the Ground Beef
In a large skillet or pot, heat the olive oil over medium heat. Add the ground beef and cook until browned and crumbly. Drain excess fat if needed.
Step 2: Add Seasoning and Liquids
Stir in the taco seasoning, Rotel, and beef broth. Mix well to coat the beef evenly with all the flavorful seasonings.
Step 3: Add the Pasta
Break the spaghetti noodles in half and add them directly to the skillet. Press them down into the liquid so they’re mostly covered. Bring to a simmer.
