Cheesy Taco Spaghetti

Ingredients

  • 1 lb ground beef

  • 1 packet taco seasoning mix

  • 10 oz spaghetti noodles

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies)

  • 2 cups beef broth

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • Fresh cilantro or green onions (optional, for garnish)


Step 1: Cook the Ground Beef

In a large skillet or pot, heat the olive oil over medium heat. Add the ground beef and cook until browned and crumbly. Drain excess fat if needed.


Step 2: Add Seasoning and Liquids

Stir in the taco seasoning, Rotel, and beef broth. Mix well to coat the beef evenly with all the flavorful seasonings.


Step 3: Add the Pasta

Break the spaghetti noodles in half and add them directly to the skillet. Press them down into the liquid so they’re mostly covered. Bring to a simmer.
