Creamy Baked Espinaca Dip
Ingredients:
2 cups fresh spinach, chopped
1 tbsp olive oil
1 small onion, finely diced
2 cloves garlic, minced
8 oz cream cheese, softened
½ cup sour cream
½ cup mayonnaise
1 cup Monterey Jack cheese, shredded
½ cup Parmesan cheese, grated
¼ tsp crushed red pepper flakes (optional)
Salt and pepper, to taste
Instructions:
Sauté the Aromatics: Heat olive oil in a skillet over medium heat. Add the onion and garlic, cooking until soft and fragrant, about 3-4 minutes.
Cook the Spinach: Stir in the chopped spinach and cook until wilted, allowing excess moisture to evaporate, about 4-5 minutes. Remove from heat.
Mix the Base: In a large bowl, blend the softened cream cheese, sour cream, and mayonnaise until smooth.
Add the Cheese & Spinach: Fold in the Monterey Jack and Parmesan cheese, then mix in the sautéed spinach mixture. Stir until well combined.
Season & Bake: Season with salt, pepper, and red pepper flakes (if using). Transfer to an oven-safe dish and bake at 350°F (175°C) for 20-25 minutes, or until hot and bubbly with a golden top.
Serve & Enjoy: Let the dip cool slightly before serving. Pair with tortilla chips, toasted bread, or fresh veggies.
