Sweet Alabama Pecan Bread


 

Ingredients

  • 2 cups all-purpose flour
  • 1 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs, room temperature
  • ½ cup avocado oil or vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • 1½ cups chopped pecans, toasted

Optional Glaze

  • ½ cup powdered sugar
  • 1 tablespoon bourbon (or milk)
  • 1–2 teaspoons milk, as needed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line a 9×5-inch loaf pan with parchment paper.
  3. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  4. In a separate bowl, whisk together the eggs, oil, vanilla, and buttermilk until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir with a rubber spatula just until combined. Do not overmix.
  6. Fold in the toasted pecans.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. If the top browns too quickly, loosely tent it with foil during the last 15 minutes of baking.
  10. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Optional Bourbon Glaze

  1. Whisk together the powdered sugar, bourbon, and enough milk to make a pourable glaze.
  2. Drizzle over the cooled loaf.

Storage

  • Room temperature: Store in an airtight container for up to 4 days.
  • Refrigerator: Up to 1 week.
  • Freezer: Wrap tightly and freeze for up to 3 months. Thaw at room temperature before serving.
