Crispy Cheesy Cauliflower Bites

Ingredients

  • 1 large head cauliflower, cut into bite-sized florets
  • 2 tablespoons avocado oil or extra-virgin olive oil
  • 1½ cups freshly grated Parmesan cheese or sharp cheddar cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper

Optional Garnishes

  • Chopped fresh parsley
  • Red pepper flakes
  • Freshly grated Parmesan
  • Lemon wedges

Optional Dipping Sauces

  • Garlic aioli
  • Marinara sauce
  • Ranch dressing
  • Balsamic glaze

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Line a large baking sheet with parchment paper.
  3. Wash the cauliflower florets and dry them thoroughly with paper towels or a clean kitchen towel.
  4. Place the florets in a large bowl. Add the avocado oil, garlic powder, onion powder, smoked paprika, and black pepper. Toss until evenly coated.
  5. Add the freshly grated cheese and toss again, gently pressing the cheese onto the florets so it adheres.
  6. Arrange the cauliflower in a single layer on the prepared baking sheet, leaving space between the pieces. Use a second pan if necessary.
  7. Bake for 20–25 minutes, until the cauliflower is tender and the cheese is golden brown and crispy.
  8. Let the bites rest for 3–5 minutes before serving to allow the cheese to crisp and set.

Air Fryer Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Arrange the seasoned cauliflower in a single layer.
  3. Air fry for 12–15 minutes, shaking the basket halfway through cooking.

Storage

  • Refrigerator: Store leftovers in an airtight container for up to 3 days.

Reheating

  • Oven: 375°F (190°C) for 5–7 minutes.
  • Air fryer: 375°F (190°C) for 3–5 minutes.
  • Microwave: Not recommended, as the cauliflower will soften and the cheese will lose its crispness.

Tips

  • Dry the cauliflower completely before seasoning for the crispiest results.
  • Freshly grate the cheese for the best golden crust.
  • Avoid overcrowding the baking sheet so the cauliflower roasts instead of steams.
  • Parmesan creates the crispiest coating, while cheddar gives a gooier, richer bite.
  • Add cayenne pepper or chili flakes for extra heat.
