Crispy Cheesy Cauliflower Bites
Ingredients
- 1 large head cauliflower, cut into bite-sized florets
- 2 tablespoons avocado oil or extra-virgin olive oil
- 1½ cups freshly grated Parmesan cheese or sharp cheddar cheese
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
Optional Garnishes
- Chopped fresh parsley
- Red pepper flakes
- Freshly grated Parmesan
- Lemon wedges
Optional Dipping Sauces
- Garlic aioli
- Marinara sauce
- Ranch dressing
- Balsamic glaze
Instructions
- Preheat the oven to 425°F (220°C).
- Line a large baking sheet with parchment paper.
- Wash the cauliflower florets and dry them thoroughly with paper towels or a clean kitchen towel.
- Place the florets in a large bowl. Add the avocado oil, garlic powder, onion powder, smoked paprika, and black pepper. Toss until evenly coated.
- Add the freshly grated cheese and toss again, gently pressing the cheese onto the florets so it adheres.
- Arrange the cauliflower in a single layer on the prepared baking sheet, leaving space between the pieces. Use a second pan if necessary.
- Bake for 20–25 minutes, until the cauliflower is tender and the cheese is golden brown and crispy.
- Let the bites rest for 3–5 minutes before serving to allow the cheese to crisp and set.
Air Fryer Instructions
- Preheat the air fryer to 375°F (190°C).
- Arrange the seasoned cauliflower in a single layer.
- Air fry for 12–15 minutes, shaking the basket halfway through cooking.
Storage
- Refrigerator: Store leftovers in an airtight container for up to 3 days.
Reheating
- Oven: 375°F (190°C) for 5–7 minutes.
- Air fryer: 375°F (190°C) for 3–5 minutes.
- Microwave: Not recommended, as the cauliflower will soften and the cheese will lose its crispness.
Tips
- Dry the cauliflower completely before seasoning for the crispiest results.
- Freshly grate the cheese for the best golden crust.
- Avoid overcrowding the baking sheet so the cauliflower roasts instead of steams.
- Parmesan creates the crispiest coating, while cheddar gives a gooier, richer bite.
- Add cayenne pepper or chili flakes for extra heat.
