Cheesy Mashed Potato Puffs

Ingredients
- 2 cups mashed potatoes (cold or room temperature)
- 2 large eggs
- 1 cup shredded sharp cheddar cheese
- ½ cup breadcrumbs or panko
- 2 tablespoons chopped green onions or chives (optional)
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- Salt, to taste

Instructions

Preheat the oven
Heat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a mini muffin pan. -
Mix potatoes and eggs
In a large bowl, combine mashed potatoes and eggs until smooth. -
Add cheese and seasonings
Stir in shredded cheese, garlic powder, pepper, and green onions. -
Add breadcrumbs
Fold in breadcrumbs until the mixture is thick enough to scoop. If it feels too wet, add an extra tablespoon of breadcrumbs. -
Shape the puffs

Bake
