Ingredients

  • 1½ pounds extra lean ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, diced
  • 6 cups beef broth
  • 1 can (14.5 oz) petite diced tomatoes
  • 3 medium potatoes, peeled and diced
  • 1½ cups fresh green beans, trimmed and cut
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 cup frozen peas
  • 1 cup frozen corn
  • ¼ cup fresh parsley, chopped

Instructions

1. Brown the beef

Heat a large Dutch oven or soup pot over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and no longer pink.

Add the diced onion and cook until softened. Stir in the minced garlic and cook for about 30 seconds until fragrant. Drain any excess grease.

2. Build the soup

Add the carrots, celery, beef broth, diced tomatoes, potatoes, green beans, tomato paste, Worcestershire sauce, Italian seasoning, salt, and pepper.

Stir well and bring the soup to a boil.

3. Simmer until tender

Reduce heat to low, cover, and simmer for about 25 minutes, or until the potatoes and vegetables are tender.

4. Add finishing ingredients

Stir in the frozen peas, frozen corn, and fresh parsley. Cook for another few minutes until everything is heated through.
