This Slow Cooker Braised Cabbage and Bacon is an easy comfort-food side dish with tender cabbage, smoky bacon, and a savory broth.

Ingredients

  • 1 medium green cabbage, cut into large chunks
  • 6–8 slices bacon, chopped
  • 1 onion, sliced
  • 2–3 garlic cloves, minced
  • 1 cup chicken broth
  • 1–2 tbsp apple cider vinegar
  • 1 tsp brown sugar or honey (optional)
  • 1–2 tbsp butter
  • Salt & black pepper to taste

Instructions

1. Cook the bacon

  • Fry bacon in a skillet until lightly crispy.
  • Remove bacon and keep a little fat in the pan.

2. Cook onion & garlic

  • In the bacon fat, cook onion for 3–4 minutes.
  • Add garlic and cook 30 seconds.

3. Add to slow cooker
Put in the slow cooker:

  • Cabbage
  • Cooked bacon
  • Onion & garlic
  • Chicken broth
  • Apple cider vinegar
  • Brown sugar or honey (optional)

Season lightly with salt and pepper.

4. Slow cook

  • Low: 5–6 hours
    or
  • High: 2½–3½ hours

Cook until cabbage is soft and tender.

5. Finish

  • Stir in butter before serving for a richer flavor.
  • Taste and adjust seasoning if needed.

Tips

  • Cut cabbage into large pieces so it doesn’t get too soft.
  • Add smoked sausage during the last hour for a heartier meal.
  • If it becomes watery, leave the lid off for the last 20–30 minutes.
