This Slow Cooker Braised Cabbage and Bacon is an easy comfort-food side dish with tender cabbage, smoky bacon, and a savory broth.
Ingredients
- 1 medium green cabbage, cut into large chunks
- 6–8 slices bacon, chopped
- 1 onion, sliced
- 2–3 garlic cloves, minced
- 1 cup chicken broth
- 1–2 tbsp apple cider vinegar
- 1 tsp brown sugar or honey (optional)
- 1–2 tbsp butter
- Salt & black pepper to taste
Instructions
1. Cook the bacon
- Fry bacon in a skillet until lightly crispy.
- Remove bacon and keep a little fat in the pan.
2. Cook onion & garlic
- In the bacon fat, cook onion for 3–4 minutes.
- Add garlic and cook 30 seconds.
3. Add to slow cooker
Put in the slow cooker:
- Cabbage
- Cooked bacon
- Onion & garlic
- Chicken broth
- Apple cider vinegar
- Brown sugar or honey (optional)
Season lightly with salt and pepper.
4. Slow cook
- Low: 5–6 hours
or - High: 2½–3½ hours
Cook until cabbage is soft and tender.
5. Finish
- Stir in butter before serving for a richer flavor.
- Taste and adjust seasoning if needed.
Tips
- Cut cabbage into large pieces so it doesn’t get too soft.
- Add smoked sausage during the last hour for a heartier meal.
- If it becomes watery, leave the lid off for the last 20–30 minutes.
