Steak Fajitas Recipe


 

Ingredients:

For the Steak Marinade:

  • Lime juice (⅓ cup)
  • Pineapple juice (¼ cup)
  • Worcestershire sauce (2 tablespoons)
  • Olive oil (3 tablespoons)

For the Fajitas:

  • 1.5 pounds skirt or flank steak
  • 1 tablespoon high-heat oil
  • 1 onion, sliced
  • 1 poblano pepper, sliced
  • 2 bell peppers, sliced
  • Salt and pepper, to taste
  • Tortillas or rice, for serving

Instructions:

Steak Marinade:

  1. In a shallow bowl, combine all marinade ingredients. Taste and adjust seasonings as desired.
  2. Coat the steak with the marinade, cover, and refrigerate for 2 to 4 hours or overnight.
  3. Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.

Cooking the Steak:

  1. Heat a cast iron skillet or frying pan over high heat.
  2. Add the steak to the hot skillet and cook for 3 to 5 minutes per side, depending on your preferred doneness (about 3 minutes per side for medium-rare).
  3. Once cooked, remove the steak from the skillet, cover with foil, and let it rest for a few minutes.
  4. Slice the steak thinly against the grain.

Fajita Vegetables:

  1. In the same skillet, heat 1 tablespoon of oil over high heat.
  2. Add the onions, poblano, and bell peppers. Sauté for 2 to 3 minutes, stirring occasionally. Season with salt and pepper.
  3. If needed, cook the vegetables in batches to avoid overcrowding the skillet.

Assembling the Fajitas:

  1. Serve the sliced steak and sautéed vegetables in warm tortillas or over rice.
  2. Top with your favorite toppings, such as sour cream, salsa, guacamole, or cheese.
