Ingredients:
For the Steak Marinade:
- Lime juice (⅓ cup)
- Pineapple juice (¼ cup)
- Worcestershire sauce (2 tablespoons)
- Olive oil (3 tablespoons)
For the Fajitas:
- 1.5 pounds skirt or flank steak
- 1 tablespoon high-heat oil
- 1 onion, sliced
- 1 poblano pepper, sliced
- 2 bell peppers, sliced
- Salt and pepper, to taste
- Tortillas or rice, for serving
Instructions:
Steak Marinade:
- In a shallow bowl, combine all marinade ingredients. Taste and adjust seasonings as desired.
- Coat the steak with the marinade, cover, and refrigerate for 2 to 4 hours or overnight.
- Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.
Cooking the Steak:
- Heat a cast iron skillet or frying pan over high heat.
- Add the steak to the hot skillet and cook for 3 to 5 minutes per side, depending on your preferred doneness (about 3 minutes per side for medium-rare).
- Once cooked, remove the steak from the skillet, cover with foil, and let it rest for a few minutes.
- Slice the steak thinly against the grain.
Fajita Vegetables:
- In the same skillet, heat 1 tablespoon of oil over high heat.
- Add the onions, poblano, and bell peppers. Sauté for 2 to 3 minutes, stirring occasionally. Season with salt and pepper.
- If needed, cook the vegetables in batches to avoid overcrowding the skillet.
Assembling the Fajitas:
- Serve the sliced steak and sautéed vegetables in warm tortillas or over rice.
- Top with your favorite toppings, such as sour cream, salsa, guacamole, or cheese.
