My kids love experimenting with fun and unique cookie flavors. Don’t get me wrong—classic chocolate chip cookies are a household favorite—but sometimes it’s fun to switch things up! That’s how these homemade Funfetti Cookies were born, and let me tell you—they were an instant hit!
How to Make Homemade Funfetti Cookies
Ingredients:
1 cup butter, softened
1 1/4 cups sugar
2 teaspoons vanilla extract
1 teaspoon almond extract
1 egg
2 1/2 cups flour
1/4 cup cornstarch
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup rainbow sprinkles
Instructions:
Preheat your oven to 375°F.
In a large bowl, use a stand mixer or hand mixer to cream the softened butter and sugar together until light and fluffy—about 2 minutes. Add the vanilla extract, almond extract, and egg, mixing until fully combined.
In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring on low speed until the dough forms. Gently fold in the rainbow sprinkles.
Scoop tablespoon-sized portions of dough onto a baking sheet, spacing them about 1 1/2 inches apart.
Bake for 12–15 minutes, until the edges are just starting to turn a light golden brown. Be careful not to overbake—these cookies are best when they’re soft and chewy!
Once cooled, add a layer of store-bought vanilla frosting and an extra sprinkle of rainbow sprinkles for a festive touch.
