Cheesy Chicken Fritters

Ingredients
2 large chicken breasts, finely chopped
½ cup shredded mozzarella cheese
½ cup shredded cheddar cheese
2 eggs
¼ cup mayonnaise
¼ cup almond flour (or all-purpose flour)
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh parsley, chopped (optional)
2 tablespoons olive oil (for frying)
Instructions
Prepare the Mixture: In a large bowl, combine the finely chopped chicken, mozzarella, cheddar, eggs, mayonnaise, flour, garlic powder, paprika, salt, and black pepper. Mix well until fully incorporated.
Form the Fritters: Heat olive oil in a skillet over medium heat. Scoop about ¼ cup of the mixture and shape it into a patty.
Cook Until Golden: Place the fritters in the hot skillet and cook for 4-5 minutes per side, or until golden brown and cooked through. Repeat with the remaining mixture.
